Named the Best French Chef in the year 2000, he earned a second star in the prestigious Michelin Guide in March 2008 for the restaurant, Hostellerie de Plaisance. Chef Etchebest’s cooking is known to be inventive, creative and amusing, resolutely forward looking with strong classical roots in a modern way. The seasonality of his cooking is reminiscent of French traditions to which he adds international touches. He believes a good dish is where taste comes first, particularly the right marriage of flavours of the various ingredients used to build tasty works of art. “I chose to become a chef because I love sharing. I enjoy discovering new things and pushing the boundaries of my abilities”.
