The United Emirates Arab’s first female national chef, Khulood Atiq, who hails from Dubai, started her career in 2008 working as an assistant for Chef Ali on his Sama TV television show. From 2008 to 2010, she held an Emirati-speciality chef position at Mina Al Salam, Jumeirah Group, where she created the Emirati food menu. With years of personal experience and research, Chef Atiq has worked with Tourism Development & Investment Company (TDIC), the developer of some of Abu Dhabi’s finest hospitality outlets including the stunning Qasr Al Sarab in the Liwa Desert, on an Emirati cuisine cookbook, which she hopes will help raise international awareness of this highly-traditional type of food. While most of the books recipes have been passed down through generations, Chef Atiq has also created her own authentic dishes using Emirati ingredients, such as dates.
